"I'm sharing this Taste of Home recipe because I need it for my friend Sigga when she & Palli are our guests for dinner & Mahjong game nights. Sigga adores strawberries & has come to expect them to be prominent in most of our meal courses. That's a tough challenge if you want to keep your dining fare fresh & interesting w/o too many "repeats". The pic on this recipe looked mighty fresh & tempting to me. Step by Step Method

Step 1

In a sml heavy skillet over med-low heat, cook & stir the sugar until melted & caramel in color (about 10 min). Stir in almonds until coated & spread on foil to cool. When fully cooled, break into sml pieces.

Step 2

In a lrg bowl, combine the romaine, onion & strawberries. Combine the dressing ingredients, drizzle over salad & toss to coat. Sprinkle w/coated almonds & serve immediately.

Step 3

Diabetic Exchanges = 1 vegetable, 1 fat, 1/2 starch

We enjoyed this strawberry salad very much twisted. Thank you for sharing this quick and easy to make recipe. Even the picky dh ate and enjoyed it minus the almonds of course (he's allergic to nuts). The dressing was the bomb, so much flavor and the candied almonds were the icing on the cake. Lovely flavors and textures made this salad memorable. Made FYC Tag Game.
