Step 1: In a sml heavy skillet over med-low heat, cook & stir the sugar until melted & caramel in color (about 10 min). Stir in almonds until coated & spread on foil to cool. When fully cooled, break into sml pieces.
Step 2: In a lrg bowl, combine the romaine, onion & strawberries. Combine the dressing ingredients, drizzle over salad & toss to coat. Sprinkle w/coated almonds & serve immediately.
Step 3: Diabetic Exchanges = 1 vegetable, 1 fat, 1/2 starch
