Ingredients

The ingredients are:
  • 1/4 cup granulated sugar
  • 1/3 cup slivered (1.52 ounces) almonds
  • 1 romaine lettuce (torn)
  • 1 small (4 ounce) yellow onion (halved & thin-sliced)
  • 2 cups halved (10.72 ounce) fresh strawberries (halved)
  • CREAMY POPPY SEED DRESSING
  • 1/4 cup mayonnaise
  • 2 tablespoons granulated sugar
  • 1 tablespoon sour cream
  • 1 tablespoon milk
  • 2 1/4 teaspoons cider vinegar
  • 1 1/2 teaspoons poppy seeds

How to Make

  • Step 1: In a sml heavy skillet over med-low heat, cook & stir the sugar until melted & caramel in color (about 10 min). Stir in almonds until coated & spread on foil to cool. When fully cooled, break into sml pieces.

  • Step 2: In a lrg bowl, combine the romaine, onion & strawberries. Combine the dressing ingredients, drizzle over salad & toss to coat. Sprinkle w/coated almonds & serve immediately.

  • Step 3: Diabetic Exchanges = 1 vegetable, 1 fat, 1/2 starch
