Strawberry Cream Puffs

Step by Step Method
Step 1
In a heavy saucepan, combine water and butter and bring to a full boil.
Step 2
Reduce heat and add flour and salt all at once, stirring vigorously with a wooden spoon until mixture forms a smooth ball. Remove from heat.
Step 3
Add eggs, one at a time, beating vigorously after each, and continue beating until dough is smooth and shiny. Chill dough a few minutes in refrigerator.
Step 4
Drop by large spoonfuls on to lightly greased baking sheet, mounding each high in centre.
Step 5
Bake in 425°F oven for 15 minutes, then reduce heat to 350°F for 20 to 30 minutes longer or until well puffed, crisp and golden brown. Cool thoroughly on wire racks.
Step 6
Cut a thin slice from the top of each puff. Remove any moist filaments of dough inside.
Step 7
Fill with whipped cream and top with fruit. If desired, replace "lid" and dust lightly with icing sugar.
