Step 1

Preheat oven to 180C fan forced (200C normal).

Step 2

Toss the carrots in olive oil and season with salt and pepper in a large baking tray and cook in the oven for about 15 minutes or until reasonably tender, tossing now and again.

Step 3

Then toss the carrots with the honey and parsley and cook for another 5 to 10 minutes or until well glazed.

I really enjoyed these carrots. Wonderful sweetness that complemented the naturally sweet carrots. I only had one huge carrot, so I cut it into discs and added some brussel sprouts to the mix...the recipe worked for the sprouts too but they weren't as tasty as the carrots. I didn't find them sticky and would add more honey if I was doing more carrots, I tablespoon isn't really much for a full recipe.

We really enjoyed these carrots...I made the medium whole ones and they came out perfect...I did cut the recipe in half for the hubby and I...this has a nice touch of sweetness to it...but we didn't fine them sticky...very easy to prepare...thanks for posting it...made for "Went to Market" tag game...

The whole family loved the carrots made this easy. I used halved large carrots and made as written....Note just watch step 3 : Keep an eye on them as the honey can burn, I just caught them in time. Wonderful side dish to our meal tonight. Thanks Pat.
