Step by Step Method

Step 1

Prepare the onions by heating a cast iron skillet over medium high heat and adding the olive oil. Add the onion and salt; cook 3 minutes, stirring constantly and dadd 1 tablespoon water; cover, reduce heat to low and cook for 40 minutes or until onions are golden brown and tender; adding more water as needed. Scrape onions into a small bowl and wipe out skillet.

Step 2

To make sandwiches: spread 2 slices of bread with sriracha sauce. Spread onions over 2 other slices of bread and sprinkle the cheddar cheese over the onions. Top with a slice of bread with the sriracha sauce side down.

Step 3

Heat skillet over medium high heat. Spread 1 side of each sandwiches with 2 tablespoons butter; place buttered side down in skillet; cook 2-5 minutes or until golden brown. Spread top of each sandwich with 2 tablespoons butter and flip sandwiches. Cook 2-3 minutes or until second side is golden brown.

Both concepts of adding Sriracha and caramelized onions, transforms it from a good grilled cheese to a welcomed flavor uplift to the pallet. These were Yum! I made a half recipe and it was one of the best sandwiches I have had in a long time. I caramelized the onions using my recipe of https://www.recipezazz.com/recipe/caramelized-onion-in-slow-cooker-or-crock-pot-28216 and used sliced sharp cheddar and cooked in the panini maker and thoroughly enjoyed this delicious sandwich for lunch. Made for Billboard Tag & I've frankly never eaten a grilled cheese sammie I didn't like. The caramelized onions are an esp good flavor & textural add. I used Cathedral City grated white cheddar we bought at Costco & Thai Pride Sriracha Hot Chili Sauce. My yrs in Dallas made me favor a "heat level", but DH has a less tolerant palate & I copied the prior reviewer by using a sriracha/ketchup combo for him. I will repeat this tasty sammie for "pamper myself" lunches, so thx for sharing the recipe w/us. :-)

This is a really delicious grilled cheese! Love the addition of caramelized onions. The heat was perfect and served it with plain ketchup. I always mix sriracha and ketchup for our grilled cheese so this was wonderful. Will be making with a blend of cheeses next time. Thanks for another keeper recipe Ellie!
