Step by Step Method

Step 1

Put lentils into a saucepan along with the bay leaves and cover with water 1 inch over the lentils. Cook with a lid on the saucepan

Step 2

Bring to a boil and simmer for 40-50 minutes or until the lentils are tender. Watch that they don't cook dry, just add more water if needed

Step 3

Drain, keep warm

Step 4

Spray a large skillet or wok lightly with olive oil, saute the garlic until golden

Step 5

Add spinach, turning it, cook until the spinach is just wilted about 2 minutes

Step 6

Add lentils, salt pepper, mix, sprinkle with lemon juice and serve

What a nice little gem!! I was looking for a different way to do up some spinach, this filled the bill. I used orange lentils. Very good and a nice change, I will be making it again and will add an onion and maybe some salsa next time. Thanks for a goodie to go with our chicken! Didn't need anything else! forgot to say I just made half a recipe; it worked out fine.
