Step 1: Put lentils into a saucepan along with the bay leaves and cover with water 1 inch over the lentils. Cook with a lid on the saucepan
Step 2: Bring to a boil and simmer for 40-50 minutes or until the lentils are tender. Watch that they don't cook dry, just add more water if needed
Step 3: Drain, keep warm
Step 4: Spray a large skillet or wok lightly with olive oil, saute the garlic until golden
Step 5: Add spinach, turning it, cook until the spinach is just wilted about 2 minutes
Step 6: Add lentils, salt pepper, mix, sprinkle with lemon juice and serve
