Ingredients

The ingredients are:
  • 1 cup brown lentils, washed, picked over
  • 2 bay leaves
  • 4 large cloves galic, mashed
  • 1 pound baby spinach, stems removed, washed, spin dried
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon fresh lemon juice

How to Make

  • Step 1: Put lentils into a saucepan along with the bay leaves and cover with water 1 inch over the lentils. Cook with a lid on the saucepan

  • Step 2: Bring to a boil and simmer for 40-50 minutes or until the lentils are tender. Watch that they don't cook dry, just add more water if needed

  • Step 3: Drain, keep warm

  • Step 4: Spray a large skillet or wok lightly with olive oil, saute the garlic until golden

  • Step 5: Add spinach, turning it, cook until the spinach is just wilted about 2 minutes

  • Step 6: Add lentils, salt pepper, mix, sprinkle with lemon juice and serve
