Step by Step Method

Step 1

Beat eggs and flour until smooth. Mix spinach and 2 cups grated cheddar to egg and flour mixture, then onion, cottage cheese, garlic, salt and pepper. Pour mixture into well-greased 2-quart casserole. Put additional 1 cup shredded cheddar cheese on top.

Step 2

Bake uncovered at 350F for 50 minutes or until set. Let stand for 10 minutes before serving.

This is so fluffy it just melts away in your mouth, I mixed green onion with the yellow, mine took only 35 minutes to bake it probably could have used another 5 minutes I was worried about overbaking it, anyway I'm make this again and may try ricotta next time, great spinach recipe, thanks
