Step 1: Beat eggs and flour until smooth. Mix spinach and 2 cups grated cheddar to egg and flour mixture, then onion, cottage cheese, garlic, salt and pepper. Pour mixture into well-greased 2-quart casserole. Put additional 1 cup shredded cheddar cheese on top.
Step 2: Bake uncovered at 350F for 50 minutes or until set. Let stand for 10 minutes before serving.
