  • 3 eggs
  • 6 tablespoons flour
  • 1 (10 ounce) package frozen chopped spinach, thawed, squeeze excess moisture from thawed uncooked spinach
  • 1/4 cup finely minced onion
  • 2 cups low fat cottage cheese
  • 1 to 2 garlic cloves, minced
  • 3 cups low fat grated cheddar cheese, divided
  • 1/2 teaspoon each salt and pepper

How to Make

  • Step 1: Beat eggs and flour until smooth. Mix spinach and 2 cups grated cheddar to egg and flour mixture, then onion, cottage cheese, garlic, salt and pepper. Pour mixture into well-greased 2-quart casserole. Put additional 1 cup shredded cheddar cheese on top.

  • Step 2: Bake uncovered at 350F for 50 minutes or until set. Let stand for 10 minutes before serving.
