Step by Step Method

Step 1

In a large bowl, combine cabbage, green onions, carrot, celery and jalapeno. Sprinkle with 1 cup sugar, and mix well then allow to sit for 20 minutes.

Step 2

Meanwhile in a small saucepan, combine vinegar, oil, salt, dry mustard, cayenne and pepper. Bring to a boil. Allow to boil 1 minute. Pour hot dressing over cabbage mixture then mix well. Allow to sit at room temperature for 1 hour then refrigerate for 1 day before using and up to 10 days.

Excellent Cabbage Salad. Love the spicy flavour, the jalapeno pepper gives it a real zing. We have a big batch Cabbage Slaw in our area that is very similar, very popular at weddings and community suppers - no surprise that it's called "Celebration Coleslaw" Pity we didn't think to add a bit of jalapeno pepper! Made half for the two of us, the extra marinating time gave us a great tasting salad. This is a perfect recipe to have on hand for the summer weekends - I love make aheads!
