Ingredients

The ingredients are:
  • 2 (1 pound) bags coleslaw (if you coleslaw mix has carrots you can omit the carrot)
  • 1 bunch green onions, chopped OR 1 medium red onion, chopped
  • 1 large carrot, grated
  • 1 large celery stalk, chopped
  • 1 japapeno, finely chopped (for extreme heat leave seeds in)
  • 1 cup white sugar
  • 1 cup white vinegar
  • 3/4 cup vegetable oil
  • 3 teaspoons salt
  • 1 teaspoon pepper
  • Small pinch cayenne
  • 1 tablespoon dry mustard

How to Make

  • Step 1: In a large bowl, combine cabbage, green onions, carrot, celery and jalapeno. Sprinkle with 1 cup sugar, and mix well then allow to sit for 20 minutes.

  • Step 2: Meanwhile in a small saucepan, combine vinegar, oil, salt, dry mustard, cayenne and pepper. Bring to a boil. Allow to boil 1 minute. Pour hot dressing over cabbage mixture then mix well. Allow to sit at room temperature for 1 hour then refrigerate for 1 day before using and up to 10 days.
