"This makes such a wonderful dipping sauce / condiment. I love to serve this with fried foods - especially vegetables, such as; onion rings, artichokes; mushrooms, zucchini, peppers, etc.. But, I also love to serve it with fried shrimp or chicken; and especially drizzled over seared scallops or steamed shrimp. It is so easy to prepare, and can also be made ahead. A delicious and unique sauce."

Step by Step Method
Step 1
Base ... Heat a small saute pan to medium heat; then add in the olive oil and onion and saute for 1-2 minutes until translucent. Next, add the tomatoes and cayenne and cook another 2 minutes until the tomatoes start to break down.
Step 2
Sauce ... Add the coconut milk, and season lightly with a pinch of both salt and pepper. You can re-season before serving. Bring to a light boil and then reduce to low heat and simmer 4-5 minutes until slightly thickened. Check for seasoning once again as it cooks - more salt, pepper or even a bit more cayenne if you want.

Serve ... Warm or room temperature. ENJOY!
