Ingredients

The ingredients are:
  • 1 cup coconut milk
  • 1 medium-large tomato, lightly seeded and fine diced
  • 1 tablespoon onion, fine diced
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil

How to Make

  • Step 1: Base ... Heat a small saute pan to medium heat; then add in the olive oil and onion and saute for 1-2 minutes until translucent. Next, add the tomatoes and cayenne and cook another 2 minutes until the tomatoes start to break down.

  • Step 2: Sauce ... Add the coconut milk, and season lightly with a pinch of both salt and pepper. You can re-season before serving. Bring to a light boil and then reduce to low heat and simmer 4-5 minutes until slightly thickened. Check for seasoning once again as it cooks - more salt, pepper or even a bit more cayenne if you want.

  • Step 3: Serve ... Warm or room temperature. ENJOY!
