Step by Step Method
Step 1
Season the chicken cutlets with pepper on both sides.
Step 2
In a small bowl, whisk together the apricot jam, soy sauce, sriracha hot sauce, and water until well combined. Set aside.

Heat a large skillet over medium-high heat and add the avocado oil or olive oil. Allow the oil to get hot.

Carefully place the chicken cutlets in the skillet and sear them for about 4-5 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

Reduce the heat to medium-low and add the apricot jam mixture to the skillet. Stir well to combine with the remaining oil and drippings.

Return the chicken to the skillet and coat each cutlet with the sauce. Cook for an additional 2-3 minutes, allowing the flavors to meld together and the sauce to thicken slightly.

Add the butter to the skillet and gently swirl it around until melted.

Remove the skillet from the heat and let the chicken rest in the sauce for a couple of minutes to absorb the flavors.
