Step by Step Method

Step 1

Cook pasta according to packet directions.

Step 2

In a large pan heat olive oil and butter on medium heat until butter has melted.

Step 3

Next place garlic and prawn meat into pan and sauté for 3 to 5 minutes or until prawns are cooked.

Step 4

Add lemon zest and juice, and white wine and reduce heat to a simmer.

Step 5

Add the tomato puree and cook for a further 3 minutes.

Step 6

Season to taste with salt and pepper and add the parsley and mint to the pan, stir through and turn off the heat.

Step 7

Finally strain the pasta and toss through the sauce and serve with extra cracked pepper.
