Ingredients

The ingredients are:
  • 250 grams dry spaghetti (spelt)
  • 1/2 cup tomato sauce (puree)
  • 300 grams fresh shrimp (prawn meat, deveined and finely diced)
  • 1 tablespoon garlic (minced)
  • 2 tablespoons butter
  • 1/4 cup mint leaves (finely chopped)
  • 1/2 cup olive oil
  • 1/4 cup white wine
  • 1 lemon (zest and juice)
  • 1 lemons (juiced)
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

How to Make

  • Step 1: Cook pasta according to packet directions.

  • Step 2: In a large pan heat olive oil and butter on medium heat until butter has melted.

  • Step 3: Next place garlic and prawn meat into pan and sauté for 3 to 5 minutes or until prawns are cooked.

  • Step 4: Add lemon zest and juice, and white wine and reduce heat to a simmer.

  • Step 5: Add the tomato puree and cook for a further 3 minutes.

  • Step 6: Season to taste with salt and pepper and add the parsley and mint to the pan, stir through and turn off the heat.

  • Step 7: Finally strain the pasta and toss through the sauce and serve with extra cracked pepper.
