Step by Step Method
Step 1
Start by bringing a large pot of water to a boil. Season the water with salt.
Step 2
Add in your pasta, and cook according to directions, al dente.
Step 3
Before straining the pasta, take two cups of the pasta water out, and set aside.
Step 4
In large skillet, melt butter add pepper saute a minute or two.
Step 5
Add the strained pasta to the large skillet, then toss. Mix in the pecorino romano cheese, and begin adding in the pasta water until you have a nice smooth sauce.
Step 6
Season with a pinch of salt to taste, and season more if you need to.
