"My favorite salad of all time is the Southwest Salad from McDonald's—I adore it! Whenever I order it, I always ask for extra cilantro glaze, beans, and corn. In fact, my own recipe reflects my love for these ingredients. I typically add about 1/8 cup of canned corn and black beans, although they unfortunately don't allow me to include that on their menu. You can add Newman's Southwest Salad Dressing, I don't."

Step by Step Method
Step 1
Shake the dressing ingredients in a mason jar to mix thoroughly.
Step 2
In a separate bowl, combine the corn, black beans, minced bell pepper, and garlic powder.
Step 3
On each plate, mix together half of the shaved romaine lettuce, baby spinach, minced parsley, and shaved carrots.
Step 4
Divide the chopped chicken evenly among the plates.
Step 5
Place the chopped tomatoes on one side of each plate.
Step 6
Pile the shredded cojack cheese next to the tomatoes.
Step 7
Add the corn mixture next to the cheese.
Step 8
Garnish each plate with dollops of guacamole and sour cream.
Step 9
Lastly, season with freshly ground pepper to taste.
