  • 2 cups shaved romaine lettuce
  • 1 cup fresh baby spinach
  • 1/16 cup shaved carrots
  • 4 ounces cooked chicken breast, chopped
  • 1/4 cup chopped tomatoes
  • 1 tablespoon minced parsley (fresh)
  • 2 tablespoons minced red bell pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1 can (4 ounces) drained corn
  • 1 can (4 ounces) drained black beans
  • 1/8 cup shredded cojack cheese
  • 1/4 cup guacamole
  • 1/4 cup sour cream

How to Make

  • Step 1: Shake the dressing ingredients in a mason jar to mix thoroughly.

  • Step 2: In a separate bowl, combine the corn, black beans, minced bell pepper, and garlic powder.

  • Step 3: On each plate, mix together half of the shaved romaine lettuce, baby spinach, minced parsley, and shaved carrots.

  • Step 4: Divide the chopped chicken evenly among the plates.

  • Step 5: Place the chopped tomatoes on one side of each plate.

  • Step 6: Pile the shredded cojack cheese next to the tomatoes.

  • Step 7: Add the corn mixture next to the cheese.

  • Step 8: Garnish each plate with dollops of guacamole and sour cream.
