"I had this salad at a Walmart and it was amazing. So I created one that was very similar to it. Top with your favorite dressing like sweet onion vinaigrette."

What a great combo of yummy ingredients! I had a huge leftover chicken tender and it was enough for 2 of us. Used lite Italian dressing.

Daily Inspiration

Great salad and a great light lunch today. I poached the chicken breasts in my favorite pineapple/lemon pepper sauce. Included the dried cranberries, apples, blue cheese. The only things I omitted were the carrot and the onions. Served with my homemade balsamic vinaigrette. YUM!

This is a great tasting salad with lots of protein. I really enjoyed it. I used goat's cheese instead of the Gorgonzola, as that is what I had in the fridge. I used a fruity vinaigrette for the dressing by Paul Newman. It is my favorite! Thank you for posting this for us to try! Linda
