"Don't know why it's called government potatoes, but it was a thing. Might have been because of government cheese back in the day. They said American cheese or cheddar. I'm dividing it myself, you do you. Would be great holiday dish."

Step by Step Method
Step 1
Cook potatoes in jacket in heavily salted boiling water until done.
Step 2
Drain, peel and grate.
Step 3
Season lightly.
Step 4
Preheat oven to 350 degrees F.
Step 5
Sauce: Melt butter with onions, season lightly.
Step 6
Add sour cream and cheese and melt.
Step 7
Add potatoes.
Step 8
Pour into a heavily buttered (2 tablespoons butter) 9x13 casserole.
Step 9
Dot with 2 teaspoons butter.
Step 10
Sprinkle on paprika.
Step 11
Bake 30 minutes in oven until lightly browned and hot and bubbly.
