"Adapted from a recipe in Bon Appetit. Savory rice with a hint of sweetness. I made just half a recipe in a rice cooker and it was perfect for 2 people."

Step by Step Method

Step 1

Combine ingredients in a saucepan or rice cooker.

Step 2

If using saucepan, Bring to a boil, cover, reduce heat and simmer for about 20-25 minutes or until water is absorbed. Place towel across the top and cover with lid when it is done and let sit for about 10-15 minutes off the heat to absorb any extra liquid or steam and make it fluffier.

Step 3

If using rice cooker, operate per your appliance instructions. You can still use the towel trick at the end.

Fantastic flavorful healthy rice! I loved the texture and slight sweetness of this rice. I usually only use 1 1/2 cups water to 1 cup of jasmine rice, so I used 1 3/4 to account for the dried fruit in this recipe. I also subbed dried cranberries for the raisins. And I did use coconut oil. This one is a keeper, thanks for posting it! Made for the Billboard recipe tag game.
