Step by Step Method

Step 1

Sort the lentils and wash them thoroughly.

Step 2

Heat the oil in a 3-quart saucepan.

Add the onion, garlic and chile slices and cook until the onion is tender, about 7 minutes.

Add the tomatoes and cilantro and cook 3 minutes

Step 5

Mashing the tomatoes into the mixture as they soften.

Step 6

Add the lentils, water, pepper and salt.

Step 7

Bring to a boil, reduce heat, and simmer, loosely covered, 30 minutes.

Step 8

Add the bacon and simmer gently 10 minutes longer to blend the flavors. Taste and add more seasonings if needed..

Very good soup! I used more pepper than you suggested b/c I had poblano, not jalapeno, and I could have used more. For serving, I garnished with avocado and chopped onion.
