Ingredients

The ingredients are:
  • 6 ounces lentils,(1 cup)
  • 1 tablespoon olive oil
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoons jalapeno chile, sliced
  • 1 pound tomatoes, peeled and chopped
  • 1/3 cup cilantro leaves
  • 5 cups water
  • 1 ½ teaspoons salt, or to taste
  • 1/2 teaspoon pepper
  • 3 ounces bacon, cooked crisp, drained well, then crumbled,(3 slices)

How to Make

  • Step 1: Sort the lentils and wash them thoroughly.

  • Step 2: Heat the oil in a 3-quart saucepan.

  • Step 3: Add the onion, garlic and chile slices and cook until the onion is tender, about 7 minutes.

  • Step 4: Add the tomatoes and cilantro and cook 3 minutes

  • Step 5: Mashing the tomatoes into the mixture as they soften.

  • Step 6: Add the lentils, water, pepper and salt.

  • Step 7: Bring to a boil, reduce heat, and simmer, loosely covered, 30 minutes.

  • Step 8: Add the bacon and simmer gently 10 minutes longer to blend the flavors. Taste and add more seasonings if needed..
