Step 1: Sort the lentils and wash them thoroughly.
Step 2: Heat the oil in a 3-quart saucepan.
Step 3: Add the onion, garlic and chile slices and cook until the onion is tender, about 7 minutes.
Step 4: Add the tomatoes and cilantro and cook 3 minutes
Step 5: Mashing the tomatoes into the mixture as they soften.
Step 6: Add the lentils, water, pepper and salt.
Step 7: Bring to a boil, reduce heat, and simmer, loosely covered, 30 minutes.
Step 8: Add the bacon and simmer gently 10 minutes longer to blend the flavors. Taste and add more seasonings if needed..
