Step by Step Method
Step 1
Mix the sugar and salt together.
Step 2
Lay the fillets skin side down on a baking rack.
Step 3
Rub the sugar/salt mixture over top of the filets.
Step 4
Place baking rack in the smoker.
Step 5
Smoke in a 250 degree Fahrenheit smoker for 1 1/2 hours.
