Step 1: Mix the sugar and salt together.
Step 2: Lay the fillets skin side down on a baking rack.
Step 3: Rub the sugar/salt mixture over top of the filets.
Step 4: Place baking rack in the smoker.
Step 5: Smoke in a 250 degree Fahrenheit smoker for 1 1/2 hours.
