"Thanksgiving is not the same without the sweet potato casserole. What's even better is that using a slow cooker will free up space on your stove top and oven. The recipe called for a 3 quart slow cooker but I think a larger size would work if keeping an eye on the sweet potatoes and adding a bit more orange juice if needed."

Step by Step Method
Step 1
Toss the sweet potatoes with the butter, half the brown sugar, Kosher salt, orange juice and vanilla extract in the slow cooker.
Step 2
Cook on high for 4 hours or low for 8 hours.
Step 3
Either mash the potatoes or using an immersion blender to smooth the potatoes out.
Step 4
Top with the rest of the brown sugar and pecans and serve.
