Step 1

In a slow cooker, combine the hominy, tomatoes, rotel, seasonings, olive oil and tomato sauce.

In a large skillet

Cook bacon until crisp. Remove with a slotted spoon to paper towels

Step 4

Drain drippings from pan reserving 1 tablespoon.

Step 5

In the same skillet, saute onion and green pepper in drippings until tender.

Step 6

Stir onion mixture and bacon into hominy mixture.

Step 7

Cover and cook on low until heated through, 8 hours. Season to taste
