Ingredients

The ingredients are:
  • 8 ounces bacon slices
  • 4 cans (72 ounces) hominy (15-1/2 ounces each)
  • 1 cup green bell pepper, chopped
  • 1 cup onion, chopped
  • 1 can (15 ounces) tomatoes
  • 1 can (10 ounces) tomatoes (with green chiles)
  • 1 can (7 ounces) tomato sauce
  • 1 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika

How to Make

  • Step 1: In a slow cooker, combine the hominy, tomatoes, rotel, seasonings, olive oil and tomato sauce.

  • Step 2: In a large skillet

  • Step 3: Cook bacon until crisp. Remove with a slotted spoon to paper towels

  • Step 4: Drain drippings from pan reserving 1 tablespoon.

  • Step 5: In the same skillet, saute onion and green pepper in drippings until tender.

  • Step 6: Stir onion mixture and bacon into hominy mixture.

  • Step 7: Cover and cook on low until heated through, 8 hours. Season to taste
