Step 1: In a slow cooker, combine the hominy, tomatoes, rotel, seasonings, olive oil and tomato sauce.
Step 2: In a large skillet
Step 3: Cook bacon until crisp. Remove with a slotted spoon to paper towels
Step 4: Drain drippings from pan reserving 1 tablespoon.
Step 5: In the same skillet, saute onion and green pepper in drippings until tender.
Step 6: Stir onion mixture and bacon into hominy mixture.
Step 7: Cover and cook on low until heated through, 8 hours. Season to taste
