Cut flank steak into thin strips and place in a ziplock bag and add cornstarch and shake to coat.
Add olive oil, minced garlic, soy sauce, water, brown sugar and carrots to the slow cooker and stir ingredients and then add coated flank steak and stir again until coated in the sauce.
Cook on high for 2-3 hours or on low for 4 to 5 hours until throughout and tender.
Can serve over rice and garnish with green onion.
