Step by Step Method

Step 1

Get out a slow cooker. Put in potatoes, onion, cauliflower, celery, garlic, half of the scallions, paprika, thyme, salt, and the pepper. Mix it together, then add the 4 cups of broth.

Step 2

Cook on low setting for 4 hours or on high setting for six hours.

Step 3

When done cooking, use a stick blender to blend the ingredients until they are smooth. You can blend them while they are still in the crock pot. If you don't have a stick blender, then pour everything into a blender and mix together before putting it all back into the slow cooker.

Step 4

Put in the half and half and the sour cream. Stir.

Step 5

Serve in bowls and place shredded cheese, crumbled bacon, and some scallions on top, if desired.

Good soup! Found I had no sour cream, so used plain Greek yogurt which gave a little added tang. Like Ellie, I used sausage instead of bacon. I also drizzled on a bit of hot sauce. DH loved it!

I did a half recipe which was a perfect size for my 1 1/2 litre slow-cooker. Made as per recipe though using full fat sour cream and for half and half I used half the amount as milk and the other half as cream to make up the quantity of half and half and mixed well together. I served it with some toasted Turkish bread and had a thoroughly enjoyable dinner on a cold, wet and chilly night. Thank you WAIGEN, looking forward to making this and trying it with sweet potato, made for For Your Consideration tag game at FF&F.

Interesting soup which was different than I expected, as It was sweeter due to the cauliflower but very good. I used smoked sausage instead of bacon and more cheese than indicated (melting some in the soup and serving some on top). I used full fat items but otherwise made as directed. Thanks for sharing!
