"Taste of Home has become a major contributor to my recipe collection, esp for recipes using my slow cooker & I do so like keeping it busy doing my work for me. We host a family brunch twice a month, so it looks like I'll rely on this recipe & my slow cooker soon. This recipe was originally published as "Slow Cooker Ham & Eggs" in Taste of Home Magazine, April/May issue of 2014. Enjoy!"

Step by Step Method

Step 1

In a lrg bowl, whisk the first 8 ingredients until blended. Stir in remaining ingredients. Pour into a liberally greased 3 or 4-quart slow cooker.

Step 2

Cover & cook on low setting for 3-4 hrs or until eggs are set.

Step 3

Allow to cool for 5-10 min. Run a knife around the edges of the crock pot & then invert it over a serving platter. The contents should slide easily onto the platter. Cut into wedges & serve immediately.

  • No special items are required.

Delicious and very easy. Served with a green salad for a light supper. Great way to use some Chritmas ham I had in the freezer.

I scaled the recipe back for 1 serve but used two eggs and as we don't get bisquick here I used plain flour and when I went to make it I discovered no sour cream so used Greek yoghurt and because I scaled it back there was not enough to put in the crock pot so I put the mix in a square buttered ramekin and baked in a 160C fan forced oven for 25 minutes and it was absolute perfection all had puffed up like a soufflé and was delicious and so filling that I did not bother with the toast I had on the side.
