Step by Step Method
Step 1
Heat the olive oil in a skillet over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent and the garlic is fragrant, about 2-3 minutes.

Transfer the sautéed onions and garlic to the slow cooker.

In the same skillet, add the chicken pieces and cook until they are lightly browned on all sides. Transfer the cooked chicken to the slow cooker.

Add the sliced carrots, celery, zucchini, diced tomatoes (with their juice), chicken broth, dried thyme, and dried oregano to the slow cooker. Stir well to combine all the ingredients.
