Step by Step Method

Step 1

Cut the florets off each head of cauliflower. Discard stems.

Step 2

Place the florets in a large food processor. Pulse until finely crumbled.

Step 3

In a large crock pot, add cauliflower crumbs, ginger garlic puree, and vegetable broth. Cover, and cook on high for 2 hours, or on low for 3-4 hours.

Step 4

Thirty (30) minutes before serving, whisk the eggs together and scramble them in a skillet.

Step 5

Add eggs, frozen veggies, and diced turkey ham (if desired) to the crock pot.

Step 6

Cook for 30 minutes more, or until the frozen veggies are warm.

Step 7

Stir in green onions and cilantro.

Step 8

Drizzle with soy sauce, to taste.

Another Linda winner! This is perfect for this cauliflower lover and my low carbers, love that it can be made in a crockpot. I made half a recipe and other than using parsley instead of the cilantro and omitting the optionals I followed through as posted and we enjoyed! Into my cookbook with this one.
