Step by Step Method

Step 1

Heat 2 tablespoons of olive oil in a large skillet. Add the onions. Cook for 10-12 minutes on medium-low heat, until they start to brown.

Step 2

Add garlic and cook 1 minutes.

Step 3

Add the zucchini, 1 teaspoon salt, and 1/4 teaspoon pepper to the pan and toss for 10 to 15 minutes, until just cooked through.

Step 4

Sprinkle with Parmesan and cook for 30 seconds more.

Step 5

Remove to a serving platter and repeat with the rest of the zucchini. Serve immediately.

After seeing photos of this recipe, I just had to make it. So on 5/11/14 I did. :)Since it was just my SO and myself the recipe was reduced to two servings.And like Bergy, I also cooked the onions covered and low for 20 minutes.Then added the zucchini and since there was no garlic on hand,garlic powder along with salt,pepper, and cheese was sprinkled liberally over the top.This made a very good side dish which went well with Oven Baked BBQ Seasoned Chicken & Rice. Thanks very much for a different way for me to serve zucchini. " Keep Smiling :) "

I am not a Zucchini lover but I loved this recipe. I cut the recipe back to 1 medium zucchini, half a large sweet onion & 2 garlic cloves. I cooked the onions on low for 20 minutes, lid on. They were golden. Added the zuke & garlic, salt & pepper - turned the heat up to high medium and stir fried the zuke for 8 minutes sprinkled on the parmesan and served - perfect. Cassie you may have made a zucchini lover out of me!9 June '14 Made again - This time I used tiny 1 1/2" zucchinis - They looked so cute. Enjoyed again thanks!

I love Zucchini and I love onions, so no surprise that this was a recipe that is now in my keeper file! Super easy, super good and a must make for zucchini lovers! Another to my keeper file.

I loved this combo of veggies and the Parmesan cheese really made them taste extra special for me. I used the leftovers by adding some spaghetti sauce to them and having it over some whole wheat linguine with a sprinkling of Parmesan cheese.
