Step by Step Method

Step 1

In a large bowl, combine all the rub ingredients. Add the meat and toss to coat thoroughly in the spice mixture. Cover and refrigerate for 8-24 hours.

In a food processor finely chop the cashews. Set aside.

Step 3

In a large skillet brown the chicken cubes on all sides in 3 tablespoons oil. Season with salt and pepper. Set aside on a plate.

Step 4

In the same skillet cook onion until light browned). Add the jalapeno pepper, garlic, ginger, and tomato paste. Cook for 2 minutes. Return the chicken to the skillet. Add the cashews and the remaining ingredients. Bring to a boil. Cover and simmer gently for about 20 minutes, stirring frequently.

Season with more salt and pepper if needed. Serve with cooked rice
