Step by Step Method

Step 1

Combine steak, sweet red pepper, green beans, cabbage, onions, and peanuts in a large salad bowl; toss gently.

Step 2

Combine vinegar and the remaining ingredients in a jar. Cover tightly, and shake vigorously. Pour the dressing over the steak mixture; toss well.

Oh, my! This super easy salad is also super good!!! I didn't toss the steak with the salad ingredients, but rather laid the slices over the salad. The dressing is awesome! Doubled up the garlic and ginger, and used chili oil instead of hot sauce. Wish I had made a little more dressing, though. The grocery store didn't have purple or regular napa cabbage, so I used savoy instead. This is a "whole meal" salad that didn't disappoint in any way - and we'll be sure to enjoy it again!

We pared this down for 2 people and served it over cilantro lime rice. Loved the combo of the veggies and the dressing. Made for Lighten UP!

We loved the dressing of this wonderful salad! I've never seen purple napa cabbage around, so instead of just using green napa I used ordinary red cabbage which I had to use up anyway. The napa probably is more tender, but taste wise this was fantastic. I'll definitely make it again or at least will use the dressing on other variations, it was so good! Thanks for sharing! Made for Lighten Up game 2020.
