Step by Step Method

Step 1

Heat vegetable oil in a large nonstick skillet or wok, over medium high heat. Combine ginger, soy sauce, vinegar,sugar, and garlic in a small bowl; whisk well.

Step 2

Add peppers and onions to hot pan; stir fry for 2 minutes. Add snow peas and shrimp; stir fry for 3 minutes. Add the soy sauce mixture, stir fry one minute or until shrimp are pink. Remove from heat, sprinkle with sesame oil and seeds.

Scaled the recipe back for the amount of prawns I had for 1 serve and added more veg and some broccolini and served over cauliflower rice for a low carb dinner and it was one of the best prawn dishes I had in some time and will certainly be repeated. I'll admit that I've made this three times since I tagged it for 2012 Billboard recipe tag game!! Twice because I had enough vegetables for two meals; then I made it with leftover rice. It was awesome with the rice. I had all of the ingredients on hand; it was easy to throw together and will make use of leftover veggies in the future. yum! Thanks!
