"A few months ago I bought some prepared, frozen, seafood stuffed jalapenos and they were delicious. I have tried to duplicate the recipe this time using sweet peppers and adding some heat to the filling. Use jalapenos if you like hot. Be generous with the filling. If your peppers are quite large cut them in half, timimg will be the same."

Step 1

Prepare your peppers by cutting them down the middle just enough to open them up. Do not cut right through them.

Step 2

Cut half way around the stem , spread the pepper and remove the membrane and seeds.

Step 3

Mix all the remaining ingredients, season with salt and pepper

Step 4

Stuff the peppers

Preheat oven to 400, Bake for 15 or a bit more minutes depending on the size of the peppers.

Step 6

The filling will look warm but not really bubbly

Step 7

Serve warm or at room temperature
