Step by Step Method
Step 1
Mix together in a blender the mango, ginger, 2 tablespoons lime juice, brown sugar chile powder and water.
Step 2
Process until somoth
Step 3
Place in a pot, bring to a light boil and simmer for 10 minutes

Remove and keep warm
Step 5
Season scallops with cumin, salt and pepper
Step 6
Heat oil in a large skillet over high heat
Step 7
Sprinkle sacallops with the cumin, salt, pepper and 2 tablespoons lime juice
Step 8
Add to pan
Step 9
Cook 3 minutes each side
Step 10
Place 4 scallops each on 5 warmed plates
Step 11
Spoon the Mango sauce over the scallops
Step 12
Decorate with cilntro sprigs and serve
