Step 1: Mix together in a blender the mango, ginger, 2 tablespoons lime juice, brown sugar chile powder and water.
Step 2: Process until somoth
Step 3: Place in a pot, bring to a light boil and simmer for 10 minutes
Step 4: Remove and keep warm
Step 5: Season scallops with cumin, salt and pepper
Step 6: Heat oil in a large skillet over high heat
Step 7: Sprinkle sacallops with the cumin, salt, pepper and 2 tablespoons lime juice
Step 8: Add to pan
Step 9: Cook 3 minutes each side
Step 10: Place 4 scallops each on 5 warmed plates
Step 11: Spoon the Mango sauce over the scallops
Step 12: Decorate with cilntro sprigs and serve
