Ingredients

The ingredients are:
  • 1 mango, medium (ripe mango, peeled, pit removed)
  • 2 teaspoons fresh ginger grated
  • 2 teaspoons brown sugar (or brown sugar splenda)
  • 1/8 teaspoon chili powder
  • 1/4 cup water
  • 4 tablespoons lime juice, fresh (divided)
  • 20 fresh scallops (large sea scallops)
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tablespoons oil (olive oil)
  • Cilantro (5 sprigs, optional)

How to Make

  • Step 1: Mix together in a blender the mango, ginger, 2 tablespoons lime juice, brown sugar chile powder and water.

  • Step 2: Process until somoth

  • Step 3: Place in a pot, bring to a light boil and simmer for 10 minutes

  • Step 4: Remove and keep warm

  • Step 5: Season scallops with cumin, salt and pepper

  • Step 6: Heat oil in a large skillet over high heat

  • Step 7: Sprinkle sacallops with the cumin, salt, pepper and 2 tablespoons lime juice

  • Step 8: Add to pan

  • Step 9: Cook 3 minutes each side

  • Step 10: Place 4 scallops each on 5 warmed plates

  • Step 11: Spoon the Mango sauce over the scallops

  • Step 12: Decorate with cilntro sprigs and serve
