"Spicy, tasty and easy. I like to slip a piece of foil over the scallops for about 5 minutes of the bake time so they don't get too brown. This recipe was originally from allrecipes"
Pre-heat oven 400F
Melt the butter and pour into an oven proof pan that will accomodate the scallops in a single layer, add scallops, turn them in the butter
Mix together the crumbs, garlic powder, paprika, parsley, minced garlic and parmesan cheese
Evenly sprinkle the crumb mixtire over the scallops, place in the middle of the oven
Bake for about 20 minutes or until the crumbs are golden and the scallops are cooked

I am on a roll. And when I am on a role, I go all out. What, you ask? Pasta....
The scallops were cooked perfectly...and so easy. I did have twice as much breading topping as I needed, and since I like it, I poured it all over the top. I shouldn't have. Next time I would cut the topping in half as I think it would be better that way. Love the idea of serving this and baked shrimp for company!
UPDATED: I made this again with 2/3 lb scallops (5 large) and 1/2 the bread crumb mixture (reg bread crumbs instead of panko)...YUM!
We love scallops and this is one of the best versions we have had. Easy to make, too.
Wonderful dinner! I used a bag (340g) of scallops for the two of us, and made breadcrumbs from homemade bread. Fast and easy dinner with tons of flavour. Served it over a lemon pasta and a salad. I still have more scallops in the freezer and DH wants this again! Thanks for sharing Bergy. Made for Billboard Recipe Tag.
lovely flavourful supper, would be great for company dinner. we love it andi will make it again. I did leave out the fresh garlic as i had used quite a lot of powdered garlic and i used fresh chopped parsley cus i had it in. Very delicious supper thanks!
