Step by Step Method

Step 1

Preheat oven to 400F.

Step 2

Place halved squash in a baking dish, or on a cookie sheet.

Step 3

Sprinkle coriander, salt, red pepper, and one teaspoon raw sugar over each squash cavity and up onto rim.

Step 4

Roast cut side up, uncovered, for 25-30 minutes, until fork tender.

Step 5

Remove from oven; increase oven temperature to BROIL.

Step 6

Add 1/2 teaspoon room temperature butter to each hot squash cavity.

Step 7

Spoon melted butter (and pooled sugar) carefully up onto the squash rim.

Step 8

Watching carefully, BROIL squash for 1-2 minutes until the squash begins to bubble and caramelize.

Step 9

Allow squash to cool for about 5 minutes before serving. If squash halves are large, halve again to serve four!

I enjoy squash and am always on the lookout for some different recipes for it. This recipe is just different enough to be interseting and delicious. It will be made again for sure.
