Step 1: Preheat oven to 400F.
Step 2: Place halved squash in a baking dish, or on a cookie sheet.
Step 3: Sprinkle coriander, salt, red pepper, and one teaspoon raw sugar over each squash cavity and up onto rim.
Step 4: Roast cut side up, uncovered, for 25-30 minutes, until fork tender.
Step 5: Remove from oven; increase oven temperature to BROIL.
Step 6: Add 1/2 teaspoon room temperature butter to each hot squash cavity.
Step 7: Spoon melted butter (and pooled sugar) carefully up onto the squash rim.
Step 8: Watching carefully, BROIL squash for 1-2 minutes until the squash begins to bubble and caramelize.
Step 9: Allow squash to cool for about 5 minutes before serving. If squash halves are large, halve again to serve four!
