Step by Step Method

Step 1

Preheat the oven to 350 degrees F.

Step 2

Trim stems from zucchini and cut in half lengthwise. Scoop out seeds and put in a large mixing bowl. Use you hands, mix together seeds with sausage, bread crumbs, garlic, Parmesan cheese and pepper.

Step 3

Stuff each of the zucchini "boats" with sausage mixture. Place stuffed boats in a greased 9x13 inch baking dish.

Step 4

Pour spaghetti sauce over the boats and sprinkle with mozzarella cheese.

Step 5

Cover with aluminum foil and cook for an hour, or until sausage is completely cooked through.

This was really yummy...I cut the recipe down to serve 2...using a large zucchini...small on one end and large on the other...I also used homemade pasta sauce from my garden...my Italian sausage was hot...the hubby and I loved it...at the end of the cooking time I broiled it to give it a nice color...thanks for sharing your recipe...made for WOTM tag game...

Bergy

This was a real treat. I didn't add any mozzarella over top and it was great even without it. I used Greenfield sausage meat and because it isn't spicy I added a teaspoon of Frank's Hot Sauce. The hour cook time was just right but I removed the foil for the last 20 minutes. Used Panko crumbs with Italian seasoning added. My friend enjoyed it too and ate the whole serving.
