Ingredients

The ingredients are:
  • 3 medium (600 grams) zucchini
  • 1 to 1 1/2 pounds Italian sausage (uncooked, or links with the casings removed)
  • 1 cup bread crumbs (soft, Italian seasoned)
  • 2 garlic cloves, minced
  • 1/2 cup Parmesan cheese, grated
  • 1/2 teaspoon ground pepper
  • 1 jar (32 ounce) pasta sauce (or homemade)
  • Mozzarella cheese, shredded

How to Make

  • Step 1: Preheat the oven to 350 degrees F.

  • Step 2: Trim stems from zucchini and cut in half lengthwise. Scoop out seeds and put in a large mixing bowl. Use you hands, mix together seeds with sausage, bread crumbs, garlic, Parmesan cheese and pepper.

  • Step 3: Stuff each of the zucchini "boats" with sausage mixture. Place stuffed boats in a greased 9x13 inch baking dish.

  • Step 4: Pour spaghetti sauce over the boats and sprinkle with mozzarella cheese.

  • Step 5: Cover with aluminum foil and cook for an hour, or until sausage is completely cooked through.
