Heat a large skillet over medium heat and add oil. Add the vegetables (-garlic) and cook 5 minutes, add the sausage and cook another 5 minutes before adding all the the slow cooker along with the beans and the remainder of the ingredients (-bay leaf). Cook on low for 8 hours or until vegetables are tender and stew is done.
