Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 yellow onion, chopped
  • 1/2 pound carrots (3 carrots, slice on the diagonal into 3/4 inch thick slices)
  • 1 cup turnip, chopped (I used 2 very small turnips)
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1 can (15 ounce) cannellini beans (drained)
  • 1 pound Italian sausage (cut into chunks, sweet sausage)
  • 1 can (10 ounces) Rotel tomatoes (tomatoes with chiles)
  • 1 can (15 ounces) chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1 bay leaf

How to Make

  • Step 1: Heat a large skillet over medium heat and add oil. Add the vegetables (-garlic) and cook 5 minutes, add the sausage and cook another 5 minutes before adding all the the slow cooker along with the beans and the remainder of the ingredients (-bay leaf). Cook on low for 8 hours or until vegetables are tender and stew is done.
