"I saw this being made on a television programme "Everyday Gourmet". I love to make recipes like this for breakfast for the family. I think cooked onions would also go great with this and mushroom for myself instead of sausage!"

Step by Step Method
Step 1
Heat a pan or BBQ over a medium heat; add the sausage and cook for 4 - 5 minutes or until golden and cooked through, remove and cool slightly before cutting in half length ways.
Step 2
Crack the eggs into the same pan or BBQ; season with salt and pepper and cook to your liking.
Step 3
Toast the muffins.
Step 4
Spread the mayonnaise generously onto each side of the muffins, top with capsicum, sausage and egg then sandwich together.
Step 5
Salt and pepper to desired taste.
