Ingredients

The ingredients are:
  • 4 sausages, Italian-style is needed
  • 2 roasted red capsicums from a jar, roughly chopped
  • 4 eggs
  • 100 milliliters mayonnaise (3 1/3 oz)
  • 4 English muffins, split in half

How to Make

  • Step 1: Heat a pan or BBQ over a medium heat; add the sausage and cook for 4 - 5 minutes or until golden and cooked through, remove and cool slightly before cutting in half length ways.

  • Step 2: Crack the eggs into the same pan or BBQ; season with salt and pepper and cook to your liking.

  • Step 3: Toast the muffins.

  • Step 4: Spread the mayonnaise generously onto each side of the muffins, top with capsicum, sausage and egg then sandwich together.

  • Step 5: Salt and pepper to desired taste.
